Energy Bars
Making your own healthy energy bars is easy with coconut oil! A lot of energy bars today are packed with sugar and sweeteners or artificial coloring. These delicious bars leave out the bad stuff, are extremely easy to make and are the perfect snack to eat before and after a workout! All you need is ½ cup cocoa butter, ½ cup coconut oil, ¼ cup honey, ½ cup cocoa powder and 1-1/5 cups shredded coconut. You can add ½ cup of chia seeds or vanilla and stevia for extra sweetness and texture. Once you have all the ingredients melt the cocoa butter in a small pan on low heat and add the coconut oil and let it melt, then add the honey, cocoa powder and shredded coconut. Pour on parchment paper and refrigerate for 1 hour or until hardened and enjoy an energy bar that will keep you going all day!
